  1. Prepare the Egg Masala Filling

    Start by breaking 4 eggs into a bowl and beating them gently. Set this aside for later.

    In a frying pan, add 1 tablespoon of oil. Once the oil is hot, add the sliced onions. Sauté on medium flame until they turn translucent. This process should take about 3-5 minutes.

  2. Lower the flame and add the sliced capsicum to the onions. Sauté for about 30 seconds. Then, add the chili powder, turmeric powder, garam masala, and salt. Stir well and continue to sauté on a low flame for another 3 minutes to allow the spices to bloom.

  3. Add the beaten eggs to the pan. Scramble them gently until they are fully cooked and incorporated with the vegetables and spices.

    Add chopped coriander leaves to the scrambled egg mixture. Mix well, then set the filling aside.

     

  4. Assemble the Sandwich

    Take a slice of bread and spread some butter on one side. Flip the bread over so the buttered side is facing down Spoon a generous amount of the egg masala filling onto the bread.

    Sprinkle some shredded cheese over the filling. Top it off with another slice of bread, with the buttered side facing up.

     

  5. Heat a griddle pan over low flame. Place the sandwich on the pan and toast for about 1 minute. Carefully flip the sandwich and toast the other side for another minute, ensuring both sides are golden brown and the cheese is melted.

    Remove the sandwich from the griddle, cut it in half, and serve immediately while hot.
