A Note Before you Start
Ridge gourd is undeniably a tasty and healthy vegetable. However, before you start making a delicious ridge gourd curry, it’s crucial to ensure the quality and taste of the vegetable. When I prepare this curry, I typically peel the skin and cut the gourd into bite-sized chunks, removing the seeds. This recipe aims for a smooth and creamy texture, and including the seeds might introduce a rough texture. However, if you prefer them, feel free to keep them.
Most importantly, test the raw ridge gourd by taking a small bite—it should taste sweet, not bitter. If it’s bitter, it’s best to discard it, as it will ruin your curry. So, before you prepare your ingredients, do a taste test of your ridge gourd first.
